Uramaki and Hosomaki are types of sushi that are produced by combining Nori seaweed and seasoned rice; however, when done by machine, this process causes excessive compactness which causes the beans to stick together in a much harder consistency than when done by hand. Due to the pressure mechanically exerted on each grain of rice, oxygen does not penetrate and the result is a loss of taste. We do everything by hand!
